Chicken Fried Steak is one of lifes greatest dining pleasures. This is probably the number 1 dish ordered in restaurants in Texas. There is nothing better than a good chicken fried steak or nothing worse than a bad one. This is the preferred meal among the cowboy crowd.
Cooking for cowboys is serious business. They aren't looking for gourmet food, they just want food that's plentiful, piping hot, and delicious. Give them a chicken fried steak, potatoes, milk gravy, maybe some pinto beans along with a yeast roll or biscuit and you will hear no complaints. Try the following recipe and your bunch will be asking for more of the same real soon.
Chicken Fried Steak
Round Steak or Cube Steak (tenderized)
2 cups of milk
2 eggs
2 cups of flour
seasoning salt
black pepper
cooking oil
Mix milk and egg together, add black pepper, seasoning salt, and any other seasonings you prefer. Dip the steak in your egg and milk mixture, make sure to coat both sides then place in seasoned flour mixture and place on plate until all pieces have been dredged. Heat oil to 350. Fry in small batches, do not crowd your skillet. Cook and brown both sides and drain on a paper towel lined plate. Keep warm.
Milk Gravy
Sweet milk or evaporated milk
1/2 cup of flour
salt & pepper
Pour off most of your grease, leaving 1/2 cup in your skillet along with all the brown bits from cooking the steaks. Stir your flour into the grease and cook until brown. If the roux looks too greasy add a little more flour, then pour in 2 cups of milk and whisk until combined, add salt and pepper to taste. If gravy gets too thick add more milk until you get the consistency you want.
Serve with a side of mashed potatoes or white rice, then pour gravy all over everything. It doesn't get any better than this! Try these recipes with your crowd and check the results. Until next time....
